Crock Pot Potato Soup.



Long time no blog, right? It's been crazy these past few months, and I mean CRAZY. Here's what I mean by crazy...
-We moved... again.
-I flew my best friend here from Illinois to live with me.
-We live with what it seems like a million people... Oh, and 3 dogs and 2 cats.
Yeah, things were so crazy that my crazy Halloween spirit was just not there this year. For those who really know me, know that this is very devastating for me. Halloween is my Christmas.

Any who, more holidays are coming up and I am really trying to get into the fall time/ holiday spirit. So, I decided to pull out my crock pot and make something warm to go with the chilliness we've been having. Like I said before, my crock pot is my favorite kitchen appliance.

Here we go...



Ingredients: Serves about 4 -6.


  • 4 cups of peeled and diced large russet potatoes (3-4) 
  • 1 small onion diced (If you don't like the smell of onions like me, I suggest not using any. Your house will smell like onions for a good 4 hours.
  • 3 cups of chicken broth
  • 4 Tbs of butter
  • 1/4 cup of flour
  • 1/4 cup of sour cream
  • 1 1/2 cups of heavy whipping cream (Half and Half will work also. I used half and half but ended up having to add more flour because it wasn't thick enough. So, I recommend using the heavy whipping cream.)
  • Salt , pepper and garlic powder to taste


Optional toppings:

  • Bacon, cooked and crumbled (Or you can be lazy and just buy bacon bits like I did.)
  • 1 1/2 cups of cheddar cheese
  • Green onions (I did not use this)


Not a lot of ingredients, right? I had most this already in the house.


Steps:

  1. Heat crock pot on high; Add chicken broth, diced potatoes and onions to crock pot and for 3 to 4 hours until potatoes are tender. ( if you like your crock pot on all day and like the smell of onions, then you can cook on low for 4 to 6 hours instead.) 
  2. About 30 minutes before it's done, when the potatoes are almost tender, in a medium sauce pan, melt the butter. Whisk in flour and cook until bubbly. Slowly add heavy cream and sour cream. The mixture should be thick. Add to whats in the crock pot and stir. Continue to cook in crock pot for 20 to 30 minutes.
  3. You can make it look pretty and serve it with the cheese, bacon bits and green onions on top for Instagram picture purposes or you can just mix that all together and just eat it.
I made 2 crock pots full (a million people in one house, remember?), so, I doubled all the ingredients and trust me, barely any of it was left.
  
Things I would do differently next time:
  • Use heavy whipping cream
  • Dice potatoes smaller
